- 2½ cups grated Darigold sharp cheddar cheese (about 10 oz.)
- ¼ cup finely chopped green onions
- 1 tablespoon flour
Toss all of the ingredients together in a mixing bowl until cheddar cheese is coated with the flour. Heat a large, non-stick skillet over medium heat. Drop about 1 rounded tablespoon of the cheddar cheese mixture into the skillet and spread out to form a 4-inch round. Cook until cheddar is starting to melt and begins to brown (2-3 minutes). Turn and continue cooking until lightly browned (about 1 minute).
Quickly drape frico over a narrow rolling pin or the handle of a wooden spoon and let cool. Repeat with remaining cheddar cheese mixture, taking care not to overcrowd the skillet. Makes about 25 frico.
